About this item
A nineteenth century, French duck press. Made from a combination of wood, ceramic, tin and steel this press dates from c.1880. It is marked “J L” on the ceramic pot and the wooden frame is marked “J L DEPOSE”. Duck presses were made for the preparation of a dish “Canard a la Presse” or pressed duck which was prepared at the table. It is a complex dish which originated in Rouen in the 19th century. For a full recipe take a look on our blog.
This press is generally in very good condition but there is one fault. The wooden follower, which goes into the ceramic pot, has a tin coating and the base of this tin coating has become detached. This can be seen in the images and would not prevent the piece from being used.
Dimensions: Length 28.5cm. Width 14.7cm. Height 42cm.
